Dinner 9/1/09

Welcome to September!! Yippee!
These recipes came from one of my favorite's: The Vegetarian 5-ingredient Gourmet by Nava Atlas. I call this meal "Fancy Rice and Beans."

Gingered Coconut Rice
one can coconut milk
1 1/2 cups basmati rice
2 garlic cloves
1 to 2 teaspoons fresh grated ginger
1 to 2 teaspoons curry powder
salt to taste

Combine 2 cups water with the can of coconut milk, boil. Stir in rice, garlic, ginger, and curry powder. Cover and simmer about 35 minutes.

Garlicky Black Beans
1 TBL olive oil
4 garlic cloves, minces
4 cups black beans, cooked
1 lime, juiced
1/4 cup cilantro

Heat oil in pan, add garlic ans saute. Add the beans, 1/2 cup of water, and lime juice. Cover over medium heat until a gentle simmer. Mash some of the beans and simmer for another 5 minutes. Top with cilantro.

Tomato Mango Salsa
1 cup chopped ripe tomatoes
1 medium to large mango
3-4 Hatch chilis
several sprigs of cilantro
1 to 2 TBL fresh lime juice

Whack it all together in food processor.

Red Bell Peppers
For some veggies.

Now, i made 6 meals of this because I had 2 food trees to deliver to. So, my price is for 6 meals, not 4.

  1. We LOVED this. Really yummy. We cooked up some of the peppers with breakfast tacos the next day, and also gave some of the raw ones to my sister's parrot, so everyone was happy! Loved the salsa. I've really liked the dips that we've been getting (hummus, salsa, white bean spread) because they are wonderful healthy snacks for the rest of the week. I LOVE YOU FOOD CO-OP!!!! I LOVE YOU!!!
